Bikini Recipe

Serves 10 servings

For the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (produces 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Instructions

For the Syrup: Combine the listed items in a pot, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the heat allowing it to reach room temperature completely. Decant into a sealable bottle, close it keeping it in the refrigerator, where it will keep for up to four weeks.

For the Batch Mix: Combine every spirits and syrup into one large bottle, let it rest for one hour, then filter it best through a fine cloth, to ensure it's perfectly clear.

For serving: Measure 85ml from the batch mix to a stirring glass packed with ice, gently stirring lightly for a minute to chill. Strain to a chilled martini glass or a similar vessel, garnish with some cranberries and finish using a light spray of mandarin oil over the top.
